Raw Hazelnut & Chocolate "Dame's Kisses" with cinnamon cream (Baci di Dama crudi al cioccolato & nocciole con crema di cannella)





Aaaah Italy...the country of romance (and food, of course)! And where could a dessert with such a romantic name come from if not from there?? I always imagined this would have been a recipe created by a man in love for the woman of his dreams for the lust of her kiss...you know? Italian style romance!! Instead, the person who invented it back in the 1852, was just the chef of the Italian royal family so not quite a romantic story after all :(

Anyways, a while ago I started discovering that I could transform some of the traditional Italian recipes into a very much healthier version. Awesome!! These "Kisses" are the perfect example in fact, and let me say it: it was such a great surprise (and success) for me! :)


Oh, and that is not all! Could you believe me if I say that they are also good for you?? Here are some of their healthy benefits:

-Naturally antioxidant because rich in vitamin E

-Hazelnuts helps prevent cardiovascular disease and lower bad cholesterol. 

- Cinnamon stabilises the level of sugar in your blood.


What a winning combination!! 


Aaaah l’Italia… paese di romantici (e di cibo, ovviamente)!!! E da dove poteva venire un dolce dal nome così fiabesco se non da qui??
Mi sono sempre immaginata che questa fosse la ricetta creata da un uomo innamorato nel tentativo di strappare un bacio alla donna dei suoi sogni... "Italian style romance" per intenderci! Ed invece la persona che la inventò nel 1852 non era altro che lo chef della regale casa Savoia...niente della romantica storia che mi ero immaginata insomma :(

Ma torniamo a noi! Da un po' di tempo a questa parte mi sono resa conto di quante ricette della tradizione italiana possano essere trasformate in una versione molto, ma molto più sana di quella originale. Great!! Questi "Baci" sono proprio una di quelle e, fatemelo dire, è stata una scoperta (ed un successo) favolosa! :)

Oh, e non è tutto! Ci credereste se vi dicessi che fanno anche bene?? Qui trovate una lista di alcuni dei benefici:

-Ricco in antiossidanti grazie alla vitamina E 

-Aiuta a prevenire malattie cardiache e abbassare il colesterolo cattivo grazie alle nocciole

- Stabilizza il livello di zucchero nel sangue grazie alla cannella

Proprio una combinazione vincente!! 





Ingredients for about 10 "Baci"

For the biscuits

1 Cup raw hazelnuts
2 Tbsp cacao powder
2 Tbsp cacao butter (melted)
3 Tbsp+1/2 pure organic Maple syrup 

For the cream

1/2 Cup cashews
2 Tbsp cacao butter (melted)
2 Tbsp+1/2 pure organic Maple syrup 
1/4 Tsp cinnamon powder
3 Tbsp rice milk (or almonds)

Time for Preparation: 20 minutes
Useful Tools: Mixer or blender


Ingredienti per circa 10 baci

Per il biscotto

1 Cup di nocciole
2 Tbsp polvere di cacao cruda biologica
2 Tbsp burro di cacao (sciolto)
3 Tbsp+1/2 sciroppo d'acero bio 

Per la crema

1/2 Cup anacardi
2 Tbsp burro di cacao (sciolto)
2 Tbsp+1/2 sciroppo d'acero bio
1/4 Tsp cannella in polvere
3 Tbsp latte di riso (o mandorle)


Tempo di preparazione: 20 minuti
Strumenti utili: Frullatore o mixer



Place the cashews into a cup and leave them to soak in warm water with a pinch of salt for about  10 minutes. This process helps activating the nut increasing its content in vitamins  and making it more digestible.

Mettete gli anacardi a mollo in una tazza con acqua tiepida ed un pizzico di sale e lasciateli riposare per 10 minuti. Questo procedimento serve ad "attivarli" incrementando il contenuto di vitamine ed a renderli allo stesso tempo più digeribili.




Grind the hazelnuts in a mixer or grinder until you get a quite fine flour.

Utilizzando un tritatutto per tritate finemente le nocciole fino a ridurle quasi in polvere.





Use a double sauce pan to gently melt the cacao butter over low heat. You can also use a pot and a metal bowl on top of it.

Sciogliete il burro di cacao a bagnomaria a temperatura bassa. Potete anche usare un pentolino e sovrapporci una ciotola di metallo.




Take a bowl and mix together the hazelnut flour, the cacao butter (2 Tbsp), the Maple syrup (3 Tbsp+1/2) and the cacao powder (2 Tbsp).


Prendete una ciotola e mescolate la farina di nocciole con il burro di cacao sciolto (2 Tbsp), lo sciroppo di Acero (3 Tbsp+1/2) e la polvere di cacao (2 Tbsp).





Take a small part of this mix (about a teaspoon) and roll into a ball shape then press one of the sides to make it flat. Set aside on a plate.

Prendete una piccola parte del composto (circa un cucchiaino) e create delle palline. Schiacciate una parte in modo da renderla piatta e disponetele su di un piatto.






For the cream: Place the cashews (rinsed and drained), the cinnamon, the Maple syrup, the melted cacao butter and the rice or almond milk into a blender and blend to get a smooth cream. 

Per la crema: Mettete gli anacardi sgocciolati, lo sciroppo d'Acero, la cannella, il burro di cacao sciolto ed il latte di riso (o mandorla) in un frullatore e frullate fino ad ottenere una crema omogenea. 




And now: the kiss!!
Take two of the chocolate halves and use a small amount of the cinnamon cream to mould them together. Refrigerate for about an hour.


Ed ora: il bacio!! 
Prendete due semisfere di cioccolato ed unitele utilizzando una piccola parte della crema alla cannella. Lasciateli raffreddare in frigorifero per almeno un'ora.




Don't they look like two lips sealed into a sweet kiss?? Of course...with a bit of imagination!!! :)

Non sembrano anche a voi due labbra socchiuse in un dolce bacio?? Certo...usando un po' di fantasia!! :)

Black Rice, Kale & Pumpkin Seeds Salad with Zucchini, Avocado and Herbs Aromatic Pesto (Insalata di riso venere con cavolo riccio, semi di zucca e pesto aromatico di zucchine ed avocado)



Let's be honest: salads have never been taken too much into consideration in the Italian food culture, maybe because they are too...I should say...healthy?? In Australia instead, making good salads is a real art, even though too often recipes uses so many ingredients and sauces to the point that a light side dish is transformed into a "all in one" full meal...not exactly my idea of healthy salad in fact! So, inspired by this culture and using a bit of my Italian twist, I tried to create something light, easy and filling at the same time to make a perfect side dish or an healthy main :) Result? Yumm! 
But let's talk a bit about the black rice first. This "superfood", privileged by the noble Chinese society, has incredible properties and a very high level of antioxidants, even more than blackberries!!! It is also especially rich in nutrients because the part of the bran is kept intact (dislike to the most common white variety) and the grain contains a higher level of proteins along with double of the fibre of the brown rice...not bad, isn't it?!

Diciamoci la verità: le insalate nella cucina italiana non sono state mai prese in seria considerazione, sarà perché, come dire, risultano troppo dietetiche?? In Australia invece, fare l'insalata è davvero un'arte, anche se troppo spesso le ricette vengono caricate di quanti più ingredienti possibili al punto tale da diventare più un piatto unico che un leggero contorno...non proprio la mia idea di insalata insomma! Così, ispirata da questa cultura e con un tocco italiano ho creato una ricetta leggera, semplice e sostanziosa perfetta come contorno o come piatto principale :) Il risultato? Buonissimo!!
Ma prima parliamo un po' del riso nero detto anche riso Venere. Questo "superfood", privilegio dalla nobiltà cinese di una volta, possiede eccezionali proprietà ed un altissimo contenuto di antiossidanti, persino più dei mirtilli!!! E' anche specialmente ricco in nutrienti perché mantiene intatta la parte della crusca (contrariamente alla varietà  bianca) e contiene una quantità maggiore di proteine e circa il doppio delle fibre del riso integrale...non male, vero?!




Ingredients for 2 people

For the aromatic pesto

1/2 small ripe avocado
100gr raw zucchini
2 Tbsp sunflower seeds
4 fresh thyme sprigs
1 fresh marjoram sprig
6 fresh basil leaves
1/2 Tbsp olive oil
1/3 cup of water
1/2 small lemon
Salt

For the salad

1 cup of black rice
2 kale leaves
1 Tbsp olive oil
1 garlic clove
1/2 small lemon
Salt


Ingredienti per 2 persone

Per il pesto aromatico

1/2 avocado piccolo
100gr di zucchina cruda
2 Tbsp semi di girasole
4 rametti di timo fresco
1 rametto di maggiorana fresco
6 foglie di basilico fresco
1/2 Tbsp d'olio d'oliva
1/3 cup d'acqua
1/2 limone piccolo
Sale q.b.

Per l'insalata

1 cup di Riso Venere 
2 foglie di cavolo riccio
1 Tbsp d'olio d'oliva
1 spicchio d'aglio
1/2 limone piccolo
Sale q.b.


While I was writing this recipe I made an interesting discover: cooking cereals with a "no cooking" method! Amazing! So I am going to propose two different ways of cooking it. Either way, it is a good idea to leave the rice to soak in cold water for a couple of hours to reactivate the grain before.

1) Absorption method: Cook the rice in double quantity of cold water, bring it to boil, lower the heat then cook for other 25-30 minutes until there will be no more water left.

2) "No cooking" method: (This option can be done the night before or in the morning to be ready for the evening). Place the rice in a pot with double quantity of cold water. Bring it to boil, cover with a lid, lower the heat and cook for 10 minutes. Now turn the heat off and leave the rice to soak in this water for a few hours covered with the lid and a tea towel. Rice will keep cooking very gently, without "stressing" the grain...and in the meanwhile you can go out and enjoy your day!!

Mentre stavo scrivendo questa ricetta ho scoperto una cosa molto interessante: la cottura dei cereali "senza cottura"! Geniale! Vi propongo quindi due metodi, in entrambe i casi è buona abitudine lasciare il riso in ammollo in acqua fredda per un paio d'ore per riattivare il chicco.

1) Cottura ad assorbimento: cuocete il vostro riso nel doppio della quantità di acqua fredda portandolo a ebollizione e continuandolo a cuocere per circa 25 minuti a fuoco basso fino a che l'acqua non sarà completamente evaporata. 

2) "Senza cottura": (Questa opzione può essere fatta la mattina per la sera o il giorno prima). Mettete il riso in una pentola con il doppio della quantità d'acqua, portate ad ebollizione, coprite con coperchio,abbassate il fuoco e cuocete per altri 10 minuti. Spegnete e lasciate la pentola coperta con coperchio ed uno strofinaccio. Il riso si continuerà a cuocere in modo molto delicato e senza "stress". Ci vorrà qualche ora prima che sia pronto...ma nel frattempo potete uscire e fare quello che volete!!




Rinse the kale leaves, chop it quite thin and massage it with olive oil, salt, a squeeze of lemon juice and the garlic clove cut into 2 or 3 parts. You need to massage it with love (it's all a bout love, isn't it?)...trying to soften it and to get the garlic aroma out. You can leave it to season for about 15 minutes then get rid of the garlic.

Sciacquate le foglie di cavolo riccio, tagliatele abbastanza sottili e massaggiatele in una ciotola con l'olio, il sale, poco succo di limone e lo spicchio d'aglio diviso in più pezzetti. Dovete massaggiare con amore (tutto va fatto con amore, giusto??)...cercando di ammorbidire le foglie e di insaporire con l'aglio che poi toglierete. Lasciate insaporire per 15 minuti.




While the rice is cooking and the kale is seasoning, you can chop the zucchini in smaller parts and grill it in the oven until golden with just a bit of olive oil .
P.s. You can definitely choose to leave the zucchini raw for this recipe, but remember that this is one of those vegetables that increases its benefits when cooked in the oven or steamed!

Mentre il riso cuoce e il cavolo si insaporisce, tagliate le zucchine e arrostitele in forno con poco olio finché non risulteranno dorate. 
N.b. Potete scegliere anche di lasciarle crude per questa ricetta, ma ricordatevi che la zucchina è una di quelle verdure che può essere cotta e trae benefici dalla cottura a vapore o al forno!




Once cooked, place the zucchini and all the other ingredients for the pesto into a small blender or mixer and blend adding the water little by little to get a smooth, but not too running consistency. It might take less than 1/3 cup of water. Add a little squeeze of lemon juice.
Ready!!

Una volta cotte, prendete un piccolo mixer ed inserite le zucchine con il resto degli ingredienti per il pesto aromatico e frullate aggiungendo acqua a poco a poco fino ad ottenere una crema liscia ma non troppo liquida. Potrebbe volerci meno di 1/3 di cup. Aggiungete uno o due cucchiaini di succo di limone. Pronta!!





Now you just have to mix the rice with the kale and pumpkin seeds then top it with the aromatic zucchini, avocado and Italian herbs pesto :)

Ora dovete solo mescolare il riso con il cavolo marinato, aggiungere qualche seme di zucca e decorare con il pesto aromatico di zucchine e avocado con erbe italiane :)





This salad is very fresh and the pesto has an amazing flavour, delicate, thanks to the herbs...amazing!!! I love Italian herbs, they can just "make it happen", you know? They give that special touch indeed!

Questa insalata è davvero fresca, il pesto ha un sapore buonissimo ma delicato grazie alle erbe...fantastica!!! Adoro le erbe italiane, sono uno di quegli ingredienti che può trasformare una semplice salsa in qualcosa di speciale!





I suggest you to serve this salad warm using the temperature of the rice...it is just perfect!

Vi consiglio di servire queste insalata tiepida usando la temperatura del riso...è semplicemente perfetta!
