4 Ingredients Asparagus Awesome Dip (Crema di asparagi con 4 Ingredienti)




Gli asparagi sono una di quelle verdure che mi ricorda troppo mia mamma! Forse per quel profumatissimo risotto che mi faceva sempre da piccola o perché li mangiavamo spesso come contorno. Ad ogni modo una cosa è certa: sono una verdura altamente sottovalutata! Un po' come i cavoletti di Bruxelles. 
Appena dici "asparagi" la gente pensa subito ai loro "effetti collaterali", ma non molti sanno invece quanto siano favolosi per il loro elevato potere diuretico, efficacissimo contro la ritenzione idrica (ragazze, non so se mi sono spiegata!), e questa non è certo l'unica delle loro qualità (senza menzionare che uno studio li ritiene persino efficaci per prevenire i sintomi da sbronza!).
Devo ammettere una cosa però: per molto tempo, da quando sono diventata una (quasi) vegetariana e fan del "raw food", non ho fatto altro che mangiarli crudi nella convinzione che quella fosse la strada giusta. Ma era davvero così? solo perché tutti urlavano a quanto facesse bene mangiare tutto crudo? Ovviamente no, e mi dispiace deludere i miei amici crudisti, ma gli asparagi vanno consumati cotti, meglio se al vapore, affinché il nostro organismo possa assimilarne tutti i loro fantastici nutrienti. Vedete? A volte è bene fare un passo indietro per imparare. :)

Asparagus is one of those vegetables that reminds me of my mum so much! Maybe because of the tasty asparagus risotto she used to make when I was little, or because we were often having them as a side plate. Either way one thing is certain: this is a very underestimated vegetable! A bit like the Brussel sprouts I reckon.
As soon as you mention the word "Asparagus" people just think about their "side effect", but not many know about their amazing diuretic quality that can be super helpful in terms of water retention (girls, have I been clear enough??) and this is not even the only quality they have (not to mention a study shows they might even prevent hangover!!).
I have to admit one thing though: when I first became (almost) vegetarian and passionate about raw food, I was eating just raw asparagus, all the time, thinking that this was the way to go. But, was it really correct? Just because some people were claiming that eating all raw food was good for you? Obviously not, and I am sorry to upset my "raw food freaks", but this vegetables gives it best when cooked, better if steamed, because this allows our body to absorb the precious nutrients. See? sometimes we need to do a step back to learn more :) 

Così l'altro giorno, preparando la cena di compleanno di Ben, li ho visti nel frigo e mi sono detta: questa è l'occasione perfetta per provare ad usarli in modo diverso dal solito...e speriamo che non sia un flop, sennò chi lo sente quello! 
Quattro ingredienti più sale & olio, non vi serve altro, ed il risultato è una salsetta così delicata che potete usarla sulla pasta, sul pane o come più vi piace. Io ci ho fatto dei crostini integrali caldi ed erano davvero buoni...a prova di suocera (e di fidanzato)!! ;D

Nota: Per via dell'elevato contenuto di acido urico, è importantissimo non eccedere il consumo di asparagi soprattutto se si soffre già di problemi come cistite, gotta e calcoli renali. Cose importanti da sapere insomma!

Ma ora...crema di asparagi...gnam!!

So the other day, when I was preparing some food for Ben's birthday party, I saw this bunch of asparagus in my fridge and thought: this is the perfect chance to do something different with it...and let's hope it turns out well otherwise who is gonna listen to his complains??
4 ingredients and a bit of oil and salt, that's all you need, and the result is a very delicate dip you can use on top of bruschetta or mixed with pasta or how you like it. I used it on top of some toasted wholegrain bread slices and it was very good...mother-in-law & boyfriend-proof!! ;)

Note: Due to its high content of uric acid, it is very important not to exceed with this vegetables if you already suffer from kidney stones, cystitis or gout. Things that are important to know hey!

But now...Asparagus Awesome dip...yumm!!!




Ingredienti per circa 2 persone

1 mazzetto di erba cipollina fresca
1 pezzo d'aglio di 1cm circa (o più se vi piace)
1/2 avocado medio
15 asparagi grandi 
1 Tbsp olio d'oliva
Sale q.b.

Ingredients for about 2 people

1 bunch of fresh chives
1 piece of garlic clove (about 1cm or more if you like it)
1/2 medium avocado
15 big asparagus
1 Tbsp olive oil
Salt to taste


Per iniziare pulite i vostri asparagi lasciandoli a bagno in acqua ed aceto per circa 20 minuti. Questo è il solito, semplicissimo passaggio se volete eliminare gran parte dei pesticidi. Tagliate la parte finale dei gambi (circa 2cm),usate un pelapatate per pelare la parte superficiale degli asparagi senza toccare le punte e metteteli da parte.

Nel frattempo tritate l'erba cipollina, sbucciate l'aglio e tagliate l'avocado a cubetti.
Nota: Qui trovate un utilissimo video che mostra come rimuovere il seme dall'avocado in modo semplicissimo.

To start, soak the Asparagus in water an vinegar for about 20 minutes. This is the same process I do for all my vegetables as it helps to wash them from pesticides. Chop off the very last part of the stems (about 2cm), use a peeler to lightly peel the surface of the Asparagus (not the tips) then place them on the side.


In the meanwhile mince the chive, peel off the garlic and chop the avocado in smaller squares.
Note: Here is an helpful video that shows how to remove the pit from the avocado.




Ora potete scegliere 2 modi per cuocere i vostri asparagi:

1-Prendete una pentola stretta ed alta da poter contenere gli asparagi, legateli insieme con uno spago e spargete del sale sulle punte. Riempite la pentola con acqua fredda lasciando le punte asciutte, coprite con un coperchio e cuocete per 5 minuti dal momento in cui l'acqua bolle.
2-Usate uno strumento per cottura al vapore, sistematelo sopra ad una pentola con acqua bollente, coprite con il coperchio e cuoceteli con il vapore finché non risulteranno teneri. Questa è l'opzione che vi suggerisco se volete mantenere ancora di più intatte le proprietà nutrizionali perché consente alle vitamine di non disperdersi nell'acqua.

Now you ca choose between two methods:

1-Take a tall pot (tall enough to contain the Asparagus), tie them all together with a twine, fill the pot with cold water leaving the tips dry, sprinkle some salt on top of them, cover and cook for 5 minute from when the water start boiling.
2-Use an instrument for steaming, place it on top of a pot that is half filled with water, cover and cook the Asparagus with the steam until soft. This is the option I suggest if you don't want to waste the precious vitamins in the water. 


Una volta cotti, prendete il vostro bellissimo mixer (questo è uno strumento che è diventato ormai il prolungamento della mia mano!), unite gli asparagi tagliati a pezzi, l'aglio, l'olio, il sale, l'avocado, l'erba cipollina e frullate il tutto per un minuto circa.

Once the asparagus are cooked, take your amazing mixer (this tool has became the extension of my arm so far!), place in the asparagus chopped into pieces, the garlic clove, the oil, some salt, the avocado, the chives and mix everything for about a minute until smooth. 





Et voilà, facile, buona, delicata, saporita! Usatela come più vi piace: su crostini caldi, con pasta o anche solo per insaporire qualche verdura cruda.

There you go: easy, good, delicate, tasty! 
You can use this dip as you like: as a delicate sauce for pasta, on top of bruschetta or just to dip in some fresh vegetables.




Nota: potete aggiungere un po' di peperoncino se vi piace un gusto più deciso. Ci sta benissimo!!

Note: you can add some chilli flakes in it if you want more of a spicy taste. It goes very well with it!!




Non è importante frullare questa crema per troppo tempo, potete lasciare che qualche pezzetto di erba cipollina o asparago rimanga intatto.

It doesn't have to be super a smooth dip, you can leave some bigger pieces of chives and asparagus in it for example.





Siccome mi erano avanzati degli asparagi, ho deciso di provare anche un'altra ricetta molto semplice.
Distribuiteli interi su una teglia da forno, conditeli bene con un po' di olio, sale e paprika e cuoceteli al grill per circa 15 minuti girandoli di tanto in tanto.
Sono un ottimo spuntino!!!

Since I had some leftover Asparagus I decided to try another very simple recipe.
Just place the whole Asparagus on a cooking tray and toss them with oil, salt and paprika. Cook under the grill for about 15 minutes. They make an excellent antipasto plate or snack!!

Super Easy Carrot, Lemongrass, Coconut & Cumin Seeds Cream (Crema alle carote, cumino e latte di cocco con lemongrass)




Lo so, questa non è proprio la più italiana delle ricette, ma se solo poteste provarla per un secondo, uno solo, vi garantisco che fareste il bis...ed il tris!!
Tutti sappiamo quanto le carote siano ricche di beta-carotene, più del doppio di altri vegetali in effetti, ma non tutti sanno quanto facciano meglio cotte che crude.
Perchè? Perchè il calore consente di ammorbidire le pareti cellulari permettendo ai carotenoidi di essere assimilati. Semplice...no??
E' un po' la stessa cosa che succede con il pomodoro...aaaaah il pomodoro e quel profumo di passata fresca. Imbattibile! Ma questa è tutta un'altra storia :D

I know, this is not really the most Italian recipe I ever posted, but if you could just taste it for a second, one second only, then I guarantee you would go for the second serving...and the third!!

Now, we all know how much carrots are important for their content of beta-carotene which is more than the double of  other vegetables in fact, but not all of us know that carrots are healthier for us if eaten cooked than raw.
Why? Because the cooking process soften the cellular surface and allows our organism to assimilate the carotenoid. Simple, right??
It's the same thing that happens for the tomatoes...aaaaaah tomato sauce and that amazing smell. Unbeatable! But this a whole other story :D

Questa è per altro la ricetta che dovete assolutamente provare se per esempio soffrite di GASTRITE perché le carote hanno la proprietà di impermeabilizzare le pareti dello stomaco proteggendolo da microorganismi nocivi.

Ma ora è tempo di cucinare!!

This is also the recipe you definitely have to try if you suffer from GASTRITIS because carrots have the property to protect the mucus lining keeping away the bad microorganisms. 
But now it's time to cook!!




Ingredienti per 2 persone


460gr di carote

1 Scalogno grande
5cm di citronella (lemongrass)
1 Tbsp semi di cumino + 1 Tsp per decorare
1 Tbsp e 1/2 di Olio di cocco liquido
270ml Latte di cocco
390ml Acqua
Sale q.b.


Ingredients for 2 people


460gr Carrots

1 big shallot
5cm Lemongrass stick
1 Tbsp Cumin seeds + 1 Tsp to decorate
1 Tbsp + 1/2 of melted coconut oil
270ml Coconut milk
390ml Water
Salt to taste





Pulite le carote e tagliatele a pezzetti di circa 1cm, conditele con 1 Tbsp di olio di cocco liquido e cuocetele in forno sotto al grill (non altissimo) per circa 30 minuti finché non risulteranno dorate. Giratele di tanto in tanto ed accertatevi che non siano posizionate troppo vicine al grill.


Peel the carrots and chop them into about 1cm pieces,

mix them with 1 Tbsp of melted coconut oil and place them in the oven with the grill on (medium) for about 30 minutes until golden. Turn them every now and them and make sure they are not too close to the heat.







Nel frattempo private lo scalogno della buccia e tritatelo, poi prendete il bastoncino di citronella (si lo so che ne avete sentito parlare solo in riferimento alle candele anti zanzare, ma vi giuro che si usa anche in cucina!!) e tagliatelo per il lato lungo dividendolo in 4 parti.

Scaldate 1/2 Tbsp di olio di cocco in un tegame, unite lo scalogno, i semi di cumino, la citronella e fate soffriggere a fuoco medio per 3 minuti circa.
Ora unite le carote, il latte di cocco e l'acqua e cuocete per altri 10 minuti. 
Pronta!

In the meanwhile peel off the shallot and mince it, then take the lemongrass stick, cut it along the side, and divide it in 4 parts.

Place the shallot, the lemongrass sticks, 1/2 Tbsp of coconut oil and the cumin seeds in a pot over medium heat and let it stir for 3 minutes.
Now add the carrots, the coconut milk and the water and cook for other 10 minutes. 
Ready!





Una volta cotta, togliete i bastoncini di citronella e lasciatene solo un pezzo piccolo di circa 2cm che potete tritare grossolanamente. 

Con un frullatore ad immersione (o un normale frullatore) frullate circa 2/3 del totale finché non otterrete una crema liscia e corposa.

Once it's cooked, take off the lemongrass sticks leaving just a small 2cm piece finely chopped inside. Using a blender, mix 2/3 of the total amount until you get a smooth, rich cream. 






La vostra crema di carote è pronta!!

Ora potete servirla con dei semi di cumino e due pezzi di citronella freschi, come nella foto.
Come vorrei che tutti poteste assaggiarla in questo momento...è troooooppo buona, così buona che vi sfido a non leccare il piatto!!!

Your carrot cream is now ready to be served!!

Top it with some fresh cumin seeds and lemongrass sticks.
Oh, I wish you could all try this cream right now...it's just sooooo yummy, that yummy that I bet you'll lick the plate!!!
