30 Second Mix Spelt&Pumpkin Pizza Dough (30 secondi mix base per pizza con farro e zucca)




Making pizza is an art! Even though it's one of the easiest recipes in the world, there are lots of variations that can alter a good result: the quantity and quality of water used, the way the dough is mixed, the flour, the quantity of yeast and the raising time. Then there is the most important ingredient: Love! Once an Italian men from Naples told me that to make a perfect pizza you had to caress the dough, massage it, be gentle...it sounded in fact like he was talking about a woman more than a pizza (!!!), but he was right: Pizza is a dough made of love and sentiment. 
Not to mention that it comes from Italy, obviously,  the most romantic and sentimental country! :D


La pizza è un'arte! Seppur sia una delle ricette più facili da fare al mondo, sono tante le varianti che possono alterarne il risultato: la qualità e quantità di acqua, il modo in cui viene impastata, il tipo di farina, la quantità di lievito e la durata della lievitazione.
E poi c'è l'ingrediente più importante:L'amore! Un giorno un signore napoletano mi disse che per fare una pizza perfetta, l'impasto andava accarezzato, massaggiato gentilmente...sembrava in effetti stesse parlando più di una donna che di una pizza (!!!), ma aveva ragione: La pizza è un impasto d'amore e sentimento.
Senza dimenticare che viene dall'Italia, una delle nazioni più romantiche e sentimentali! :D

Why an wholemeal pizza then? Have you ever heard about the "Mediterranean Diet"? Well, the Mediterranean diet, the original one, was based over wholemeal foods, full of fibres, able to make you feel fuller for a longer time thanks to the high content in nutrients and mineral salts...exactly the opposite of modern products like white flours for example!

This incredibly easy pizza base is healthy and way easier to digest thanks to the spelt flour. It is soft, light and, last but not least, approved by my boyfriend. Yes!! ;)  


Perché pizza integrale quindi? Avete mai sentito parlare della "dieta mediterranea"? Beh, la dieta mediterranea, quella originale, era basata su cibi integrali, ricchi di fibre, che facevano sentire più sazi più a lungo grazie all'elevato contenuto di nutrienti e sali minerali...esattamente l'opposto di prodotti moderni come le farine bianche per esempio! 

Questa pizza tutta salutare è molto più digeribile grazie all'utilizzo della farina di farro, è morbida, leggera, incredibilmente facile e, ultimo ma non ultimo, approvata dal mio ragazzo. Yes!! ;)


That's amore!






Ingredients for 2 to 3 pizzas

400g of wholemeal spelt flour plus 200 gr 
280ml of spring water
1 Tbsp of honey of sugar
1 Tbsp and 1/2 of olive oil
10g of dry yeast
80g raw pumpkin
5g of sea salt


Ingredienti per 2 o 3 pizze

400gr di farina integrale di farro e circa 200gr 
per stendere la pizza
280ml di acqua purificata o filtrata
1 Tsp di miele o zucchero
1 Tbsp e 1/2 di olio di oliva
10gr lievito secco
80gr zucca cruda
5gr di sale marino


Prep. Time: 20 minutes
Raising Time: 24 hours  in the fridge
Resting Time: 2 hours outside the fridge
Cooking Time: 5 to 6 minutes

Tempo di preparazione: 20 minuti 
Lievitazione: 24 ore in frigo
Riposo: 2 ore fuori dal frigo
Cottura: 5 o 6 minuti 


Note: you can prepare this base the day before and have it ready for the following evening :)
Nota: potete preparare la base il giorno prima ed averla pronta per la sera successiva :) 



Chop the pumpkin into small pieces and peel the skin off with a peeler. Place a steamer in a pot filled with about 4cm of water and cook the pumpkin for 15 minutes until tender.

Tagliate la zucca a cubetti ed usate un pelapatate per eliminare la buccia. Disponete un cestello per cottura al vapore in una pentola riempita con circa 4cm di acqua e cuoceteci la zucca per circa 15 minuti finché non risulterà tenera.






Stir together the water with the yeast and the honey (or sugar) in a jar and let it settle for 5 minutes. Meanwhile take a large bowl and mix together the 400g of flour, oil and salt.

Mischiate l'acqua con il miele o lo zucchero ed il lievito in un bicchiere grande e lasciate riposare per 5 minuti. Nel frattempo prendete una ciotola capiente e mescolate i 400gr di farina con olio e sale.






Pour all the water into the bowl and with a gentle clockwise circular movement mix the dough for not more than 30 seconds, 1 minute max, this avoids the gluten to be released and the dough to become too hard when cooked. It doesn't have to be perfectly mixed, you will obtain a quite humid mix. Cover the bowl with some plastic or a damp cloth and refrigerate for 24 hours, yes, 24 hours!! The time it takes to make the most delicious, soft and light pizza ever! :)

Unite tutta l'acqua tutta al mix di farina e con un movimento gentile e circolare mescolate il composto per non più di 30 secondi, 1 minuto al massimo, questo aiuta a non far sviluppare il glutine e quindi a non far diventare l'impasto duro in cottura. Non occorre mescolarlo alla perfezione, il mix sarà piuttosto umido. Coprite la ciotola con della pellicola o un panno umido e refrigerate per 24 ore, si, 24 ore!! Il tempo che serve per fare la pizza più buona, morbida e digeribile del mondo! :)











This will be your pizza dough after 24 hours! Airy, moist and light... Let it rest outside the fridge for about 2 more hours.

Questo sarà il vostro impasto dopo 24 ore! Poroso, umido e leggero... Lasciatelo riposare fuori dal frigo altre 2 ore.







Now pour some flour on the bench and mix the base to make it uniform. It will require a bit of flour to obtain a non sticky dough. Lay out the base using your hands shaping it into a rectangle, fold the shorter sides one on top of the other towards the middle.

Ora spargete della farina sul piano di lavoro e impastate la base per renderla omogenea. Vi servirà abbastanza farina per ottenere un impasto che non si appiccichi. Stendetela con le mani in modo da formare un rettangolo e piegate i due lati corti uno su l'altro verso il centro.





Flip the rectangle so the folded part will lay on the bench, divide this in 2 or 3 equal parts and shape them into portions. 2 portions if you want a thicker pizza, more like Naples style, and 3 if you like a thinner pizza base instead.


Capovolgete il vostro rettangolo così che la parte con le pieghe sarà verso il basso, dividetelo in 2 o 3 parti uguali e formate dei panetti. 2 panetti se volete una pizza più alta, un po' stile napoletano, e 3 se invece vi piace più sottile.





Lay out your pizza base using a rolling pin, I laid mine quite thick, but you can choose to do the way you prefer. The good thing about this base is that no matter how thin it is, it will always be soft.


Stendete l'impasto con un matterello, io l'ho stesa non troppo sottile perché mi piace più alta, ma voi potete scegliere di stenderla come più vi piace. La cosa bella di questo impasto è che non importa quanto sottile sia, resterà sempre abbastanza morbido.





Now it's time to rock!! Be creative with your topping, but keep it simple. I topped mine with some fresh Kale, cherry tomatoes, sage, rosemary, chilli flakes and a pick of sea salt...and a drop of olive oil, of course :)


Ora è il vostro momento!! Siate creativi con il condimento, ma mantenetelo semplice. Io ho condito la mia con del cavolo riccio, pomodorini, rosmarino, salvia, peperoncino e un pizzico di sale...e un goccio d'olio d'oliva ovviamente :)





Turn on the oven at 250° C and place the pizza stone (if you have one) on the middle tray. When the oven reaches the temperature cook the pizza on top of the hot stone for about 5 minutes or 6 minutes if you are using a normal tray.


Accendete il forno a 250°C e disponete la "pietra per pizza" o "pizza stone" (se ne possedete una) nel ripiano intermedio. Quando sarà caldo infornate la pizza e cuocete per 5 minuti o 6 minuti se usate una teglia normale.






This is a super light dough, soft, and it will keep you full for quite a while without making you bloated like other pizzas.

Questo impasto è leggerissimo, morbido e vi lascerà sazi per molto più tempo senza gonfiare come le altre pizze.







I am quite sure this recipe won't disappoint you! The winning element is definitely its lightness and  digestibility...unbeatable!!!

Sono sicura che questa ricetta non vi deluderà! L'elemento vincente è decisamente la sua leggerezza ed alta digeribilità...imbattibile!!!

Spelt & Quinoa Gnocchi (gnocchi di farro e quinoa)



E' un giovedì di sole, ed io ho in mente solo una cosa: Giovedì gnocchi! 

Proprio come recitavano i menù delle trattorie di una volta...aaah che bei tempi quelli! Ma come rivisitare un piatto della tradizione italiana creandone una versione più salutare e con un gusto diverso? 



It's a sunny Thursday and I have just one thing in my mind: Thursday Gnocchi!  Just like it used to be written on the menu' of the Italian restaurants back in the time...ooooh those times!!! But how to reinvent a traditional Italian dish creating a healthier and tastier version of it? 


L'ispirazione viene dal Perù, durante uno dei miei recenti viaggi in giro per il mondo, dove mi innamoro di uno dei cibi più favolosi mai scoperti: la quinoa. E' un alimento naturalmente privo di glutine e dalle straordinarie qualità, che viene usato dalle popolazioni Inca da più di 5000 anni ed è da allora considerato un cereale sacro...e non è certo difficile capirne il perché! 


The inspiration came from Peru', during one of my last travels around the world, when I fell in love with the culture of one of the most amazing foods: The Quinoa. It's a natural gluten-free cereal with extraordinary qualities that has been used by the Inca population since 5000 years ago and has been considered a sacred food since then...it's certainly not hard to understand why!! 


Così mi metto in cucina...ed inizio a sperimentare. Gnocchi di quinoa e farro! Perché no?? Ecco la sfida! Il farro è un altro di quegli alimenti che ho riscoperto circa un anno fa come valido sostituto della farina bianca (decisamente meno salutare). A differenza della quinoa però, non è privo di glutine, ma il suo contenuto è minore rispetto ad altre farine ed i suoi benefici lo rendono certamente un ingrediente speciale per molte ricette.


So I get into the kitchen...and start experimenting! Quinoa and spelt gnocchi? Why not! Here is my challenge. Spelt is another one of those food I recently rediscovered is a valid substitute of the white flour (which is definitely not as healthy). Differently from quinoa, spelt is not a gluten-free cereal, but its content of gluten is lesser comparing to other grains and its benefits make it an undoubtedly special ingredient for many recipes. 


Beh, indovinate un po'?? l'impasto viene fuori sorprendentemente buono: i miei gnocchi hanno una consistenza perfetta, la quinoa si sente ma non in modo eccessivo ed il sapore è favoloso, integrale, gustoso...proprio come li volevo io!

Allora?? Cosa aspettate a provarli? Giovedì...gnocchi!


Well, guess what?? The result is just fantastic!! My gnocchi gave a perfect consistency, you can taste the quinoa, but it's not too predominant, and the flavour is great, whole, tasty...just like I wanted them to be! 

So...what are you waiting for?? Thursday...gnocchi!




Ingredienti per 3 o 4 persone

Per gli gnocchi

Patata Australiana Royal Blue o altra patata a pasta bianca 400gr

Quinoa bianca biologica 75gr

Farina di farro integrale 125gr (più circa 150gr per impastare)

1 uovo medio (biologico)

Qualche foglia di basilico tritata a mano

Sale, Pepe q.b.


Per il condimento

5 pomodori rossi grandi o circa 2 manciate di pachino per persona

1 spicchio d'aglio

1 mazzo di "kale" (in Italia è il corrispettivo del cavolo nero, ma potete eventualmente sostituirla con della rughetta) 

2 cucchiai di olio di riso (alternativa salutare all'olio d'oliva) 

Sale q.b.


Ingredients for 3 to 4 people

For the Gnocchi

Australian Royal Blue potatoes or any other with white flesh 400gr 

Wholemeal spelt flour 125gr (plus about 150gr for the dough)

White organic quinoa 75gr

1 Free range egg

Some hand chopped basil leaves

Salt & Pepper 


For the Sauce

5 big red tomatoes (alternatively use 2 handfuls of cherry tomatoes for each person)

1 garlic clove

1 bunch of kale 

2 tablespoons of rice bran oil (healthy alternative to olive oil)

Some salt 


Lessate le patate con la buccia mettendole in una pentola con acqua fredda e cuocetele per circa 30/40 minuti o finchè non risulteranno morbide all'interno (testate con uno stuzzicadenti). Potete fare questa operazione il giorno prima e lasciarle riposare nella loro acqua fino al momento in cui le utilizzerete. Una volta cotte, pelatele e passatele con uno schiacciapatate all'interno di una ciotola capiente.

Leave the skin of the potatoes on, and boil them in a pot filled with cold water for about 30 to 40 minutes or until they are tender inside (you can test them with a toothpick). If you want, you can to cook them the day before and leave to rest in the same water. Once cooked, peel the skin off, take a large bowl, and use a potato masher (exactly like the one in the picture) to reduce them into strings.



Sciacquate la quinoa con acqua fredda e cuocetela per circa 15 minuti nel doppio della quantità di acqua (ad esempio per una tazza di quinoa usate due tazze di acqua). Scolatela per eliminare ogni residuo di liquido e fatela raffreddare bene in un colino.


Rinse the quinoa with cold water then boil it for about 15 minutes in double of the water (i.e. two cups of water for one of quinoa). Drain it well from the liquid, then let it cool down in a strain.



Unire il basilico, la quinoa, l'uovo sbattuto, 125gr di farina di farro, il sale (non troppo) ed il pepe insieme alle patate e create un impasto compatto aiutandovi con un cucchiaio. Dovrà risultare abbastanza consistente da poterlo manipolare per formare i nostri gnocchi.

Mix together basil, quinoa, the egg slightly beaten, 125gr of spelt flour, salt (a teaspoon or so!) and some pepper along with the potatoes. Mix the dough helping yourself with a spoon until it becomes compact and easy to manipulate.


Una volta fatto l'impasto prendetene una parte, distribuite della farina sul piano di lavoro, e create un cilindro lungo e non troppo sottile. Da questo ne potrete tagliare dei cilindri più piccoli di circa 1.5cm di lunghezza. Se l'impasto risulta troppo appiccicoso, potete aggiungere un po' più di farina sul piano. 


Once you made the dough you can take it apart and roll it into the shape of a long and not too thin tube. From this you can cut your gnocchi, if this mix results too sticky, you can drop some flour on the bench top and roll the gnocchi over it.


Disponete gli gnocchi distanziati su un piatto infarinato e cuoceteli man mano in abbondante acqua salata fino a quando non verranno a galla, quindi trasferiteli su un altro piatto dove avrete versato un po' di olio per non farli attaccare.


Lay the gnocchi over a plate covered with some flour making sure they are apart from each other, and cook them in boiling salty water until they come up to the surface. Transfer them to another plate with some oil on the bottom to avoid them to stick to the base.


Un consiglio: cuocete gli gnocchi subito man mano che li tagliate. Potete sempre usarli fino a 3 giorni dopo conservandoli su di un piatto coperto in frigo.


Tip: Cook the gnocchi as you make them. You can still use them up until 3 days after keeping them on a covered plate in the fridge.

Ora potete preparare il condimento. Tagliate il pomodoro a cubetti eliminando i semi e mettete 2 o 3 cucchiai d'olio ed uno spicchio d'aglio in una padella calda. Non appena l'aglio soffrigge potete aggiungere i pomodori e saltarli per 2 minuti finchè non risulteranno morbidi, ma non stracotti. Unite la "kale" tagliata sottilissima (o la rughetta), cuocete per 2 o 3 minuti, infine aggiungete gli gnocchi e mantecate fino a che non saranno caldi. 

Now you can prepare the sauce. Chop the tomatoes into small pieces (get rid of the seeds) and put 2 or 3 tbsp of oil in a hot non stick pan with the garlic clove. When the garlic starts to fry add the tomatoes and stir fry until they are soft, don't overcook them! Add the chopped kale, stir fry for about 2 to 3 minutes until soften, then add the gnocchi and cook for a minute or so.




Servite con un goccio di olio d'oliva a crudo....buonissimi!!

Serve them with few drops of olive oil….amazing!!!!

Questi gnocchi sono freschi, leggeri...la quinoa nell'impasto gli da un gusto ed una consistenza speciale e la farina di farro li rende più digeribili! 


These gnocchi are fresh, light…the quinoa gives to the dough a special taste and consistency and the spelt flour makes them more digestible.


Se volete provare un condimento alternativo, potete tagliare delle rondelle di zucchine e saltarle in padella con cipolla rossa poi ridurne una parte in puree e mescolare il tutto con gli gnocchi. :)


If you want to try a different sauce, you can chop zucchini into squares, stir fry them with some red onion then puree a part and mix it all together with gnocchi.
