Vegan (Almost) Raw Carrot&Cinnamon Cream Tart (Torta di carote vegana "quasi" cruda)





Era il momento di un po' di dolce, no??
Da quando ho finito i miei 21 giorni di "sugar detox" non mi sono più dedicata molto a questa che poi è la mia prima passione in ASSOLUTO: i dolci!!!
In effetti la mia primissima ricetta è stata proprio la pasta frolla, mi ricordo che mia mamma comprava quella surgelata già pronta ed io un giorno le dissi "Ma quanto ci vorrà a farla fresca??", e da quel momento non ho più lasciato la passione della cucina! In Italia poi, la colazione è un tripudio di torte, cornetti e biscotti della Mulino Bianco da inzuppare nel cappuccino (aaaaah che ricordi!!!) ed una delle ricette che adoravo era proprio la morbidissima torta di carote perché profumava da morire ed era leggerissima, beh, non considerando tutte quelle uova e quel burro. Così l'altro giorno ho deciso di reinventare un classico delle ricette della nonna nella versione più salutare che ci sia: 
-Senza glutine
-Senza zuccheri raffinati
-Senza farine
-Senza uova

Impossibile?? Scopritelo con me :)

Ah, e se vi state chiedendo perché questa ricetta è "quasi" cruda e non interamente cruda, non dovete dimenticarvi che le carote sono una di quelle verdure che va cotta e frullata per ottenerne il meglio dei benefici!! 


It was about time for a dessert, right??
Since I finished my 21 days sugar detox I didn't dedicate much time to what has always been my first passion ever in the kitchen: desserts!!!
In fact, my first recipe ever was a short pastry, I remember my mum used to buy the pre packed one all the time and one day I was like "Mum, isn't it better to actually make it yourself??"...and that's the day my passion for cooking started!
Also, in Italy breakfast is pretty much just cakes, croissants and biscuits sopped up in cappuccino (aaaah good memories!!!) and one of the cakes I loved the most was the super soft carrots cake because of its vanilla flavour and because it was so light, well, until I discovered how many eggs and butter were in it. :/
So the other day I thought about reinventing this Italian traditional "grandma's recipe" and make an healthier version of it:
-Gluten free
-Refined sugars free
-Flourless
-Eggs free


Impossible?? Find it out with me :)

Oh, and if you are wondering why this recipe is "almost raw" and not entirely raw, just remember carrots is one of those vegetables that has the best properties when cooked and pureed. Yep!




Ingredienti per 2 tortine

Per la base

1/2 cup mandorle non pelate (80gr)
20gr di uvetta biologica
1 Tbsp olio di cocco liquido (15ml)
4 gocce di essenza di vaniglia o
i semi di mezza bacca (opzionale)


Per la crema

155gr di carote
1/4 cup olio di cocco liquido (60ml)
2 Tbsp latte di cocco intero (30ml)
2 Tbsp di miele biologico 
1/2 Tsp di cannella
5 gocce di essenza di vaniglia o 
i semi di mezza bacca (opzionale)

Utensili necessari:
-sacca da pasticcere (qui trovate un link utile per crearne una da soli) oppure 2 stampi cilindrici senza fondo da almeno 5cm (diametro e altezza)
-2 stampini grandi tondi per biscotti (se usate la tasca)


Ingredients for 2 desserts

For the crust

1/2 cup of raw almonds (80gr)
20gr of organic raisin
1 Tbsp of melted coconut oil (15ml)
4 drops of vanilla extract or the beans of half vanilla pod (optional)


For the carrot cream

155gr of carrots
1/4 cup of melted coconut oil (60ml)
2 Tbsp of full fat coconut milk (30ml)
2 Tbsp of raw organic honey 
1/2 Tsp of cinnamon powder
5 drops of vanilla extract or the beans of half vanilla pod (optional)

Useful tools:
-One pastry bag (here is how to create one yourself) or 2 medium size metal cylinders (at least 4 to 5cm tall)
-2 not too small biscuits round moulds (if you are using the pastry bag)




Iniziate organizzando i primi ingredienti:

-Ammorbidite l'uvetta in una ciotola con acqua calda per circa 10 minuti
-Sciogliete l'olio di cocco a fuoco basso a bagnomaria per assicurarvi che non si alterino le sue proprietà.

Start organising the first 2 ingredients:
-Soak the raisin in warm water for about 10 minutes
-Melt the coconut oil over low heat using a double-boiler system (two pots on top of each other).


Nel frattempo pelate le carote, tagliate a pezzetti più o meno piccoli, e cuocetele in un pentolino con acqua fredda per circa 20 minuti. Questo sistema aiuta a conservare le proprietà delle carote! :)


Meanwhile peel off the carrots, chop them into smallish pieces, and boil them in a pot filled with cold water for about 20 minutes until soft. This process helps maintaining the properties of the carrots :)





Preparate la base frullando le mandorle nel mixer fino ad ottenere la consistenza del pangrattato, aggiungete l'uvetta scolata e strizzata, 15ml di olio di cocco e 4 gocce di vaniglia o i semi di mezza bacca. Quest'ultimo ingrediente è opzionale ma essenziale se volete quel profumo di vaniglia che non guasta mai!

To prepare the crust, mix the almonds in a food processor to obtain a fine breadcrumb then add the drained raisins, 1 Tbsp of melted coconut oil and the vanilla extract (or beans). This last ingredients is optional, but essential if you want that "yumm" flavour!







Dividete il composto in due stampini disposti sopra ad un piatto piano, potete usare anche degli stampini normali per fare i biscotti. Pressate con le dita fino ad ottenere una base compatta e lasciateli in frigo coperti per almeno mezz'ora. L'olio di cocco si solidificherà dando alla base la consistenza di un biscotto :)

Divide the crust in 2 moulds placed on top of a flat plate, you can use any biscuit mould to do this or even the rings for fried eggs.
Press it down and refrigerate for at least 30 mins. The coconut oil will solidify giving the mixture the consistency of a biscuit.





Usate un frullatore o un piccolo mixer per frullare le carote cotte e fatte freddare insieme al resto degli ingredienti per la crema. Dovete ottenere un composto non troppo denso ma liscio, senza grumi. Mettete la crema in una ciotola e lasciatela rapprendere in frigo per almeno 4 ore. Sarà abbastanza consistente quando la tirerete fuori.

Use a blender to blend the carrots (cooked and drained) along with the other ingredients for the cream. You will need to achieve a smooth consistency, not too thick. Pour the cream in a bowl and refrigerate it for about 4 hours. It will become quite thick afterwards.






Dopo 4 ore circa, tirate fuori la crema dal frigo e lasciatela riposare per 5 minuti. Separate la base del tortino dagli stampi pressando delicatamente con le dita e disponetene ognuno su di un piatto. Se avete una sacca da pasticcere, riempitela con la crema e decorate ogni base a piacere. Io sono partita da cerchi concentrici :)


Nota: se non avete una sacca da pasticcere, potete prendere dei cilindri più profondi, disporli su di un piatto, formare la base con le mandorle sul fondo, riempire direttamente con la crema, e lasciare in frigo per almeno 4 ore. Una volta pronti basterà pressare il tortino delicatamente dalla base verso l'alto per separarlo.


After 4 hours, take the mousse off the fridge and leave it out for a few minutes. Separate the crust from the moulds pressing it lightly. If you have a pastry bag, fill it with the mixture and squeeze it down to create the decoration you want on top of each base. I started from concentric circles :)

Note: If you don't have a pastry bag, no worries!! You can use 2 taller metal cylinders or any other mould, press the crust down, top it with the mousse and refrigerate for 4 hours. If you are using a cylinder, you can separate the dessert from the mould pressing it from the crust up.




Consiglio: Potete conservare i vostri tortini in frigorifero per qualche giorno. Ricordatevi di lasciarli fuori per almeno 5 minuti prima di servirli per consentire alla crema di ammorbidirsi un po'.

Tip: You can keep these tarts in the fridge for a few days. Remember to leave them out for at least 5 minutes before serving them to allow the cream to soften a bit.





Ora potete decorare il vostro piatto con pizzico di cannella e quello che più vi inspira!!! Io ho usato dei rami freschi presi dal mio giardino :)
Potete anche usare un pelapatate a julienne per creare delle striscette di carota che potete mettere in forno sotto al grill per qualche minuto per farle asciugare e poi decorare il vostro tortino!

Now you can decorate your plate with a pinch of cinnamon on top and whatever inspires you!!! I went in my garden and got some fresh green leaves :)
You can also use a julienne peeler to peel a carrot then place it under the grill for a few minutes to dry it up and decorate your tart!




Questo dolce è perfetto! Innanzitutto perché sfrutta la qualità della carote di essere naturalmente dolci così da poter aggiungere meno zuccheri, e poi perché profuma di vaniglia e cannella...ed è cremoso, ma consistente...una meraviglia!!

This is quite a perfect dessert! First of all because it uses the natural sweetness of carrots to avoid adding more sugar (win!), then because it has this amazing flavour of vanilla and cinnamon...and it's so creamy, rich...a bliss!!






Lasciatevi conquistare da questo dolce!! Il mio ragazzo l'ha apprezzato moltissimo (neanche a dirlo!) e sono sicura che piacerà anche a voi. E' perfetto per una di quelle cene estive con amici :)

Raw or Cooked Almonds Stuffed Capsicum with Capers, Cherry Tomatoes&Olives (Peperoni ripieni di mandorle, capperi, olive e pomodorini)




Mia nonna viene dalla Puglia, una delle più belle regioni d'Italia, ed aveva solo 18 anni quando si è sposata e 19 quando è diventata mamma...e non sapeva cucinare una sola cosa! Giuro, non una, lei lo dice continuamente.
Oggi invece è una delle cuoche più appassionate e brave che conosca ed una delle ricette che mi faceva sempre da piccola erano proprio i peperoni ripieni.
Li mangiavo con così tanta passione che mio nonno adorava me più di ogni altro nipote perché "Federica da grandi soddisfazioni a tavola!".

My grandmother is from Puglia, that amazing region in the South of Italy, and she was 18 when she got married and 19 when she became a mum...and she had no idea how to cook! I am serious, she could not cook a single thing, she always says that.
Today is one of the most passionate and amazing chefs I know and one of the recipes she used to make when I was little was her stuffed capsicum.
I was eating them so voraciously that my grandfather loved me over all the other grandkids because "Federica always gives much satisfaction when she eats!"


Seppur eccezionali però, devo ammettere che non fossero una delle cose più leggere che abbia mai assaggiato, forse per via di quella mollica di pane impregnata d'olio!!!
Ok, ma cosa avrei potuto usare per rendere questa ricetta salutare e all'altezza di questo blog?
Mandorle...mmmm...non ne ero convinta affatto...però ho tentato la sorte e, O MIO DIO, possibile?? Aveva funzionato alla perfezione, non solo, il loro sapore ed il profumo era uguale a quelli di mia nonna. Win!!

Se siete fan del crudissimo vi comunico che avete ben 3 opzioni per questa ricetta: può essere cotta, può esser fatta completamente cruda, o potete cuocere il ripieno e lasciare crudo il peperone. E' eccezionale in ognuna di queste opzioni, garantito! Per altro, lasciando il peperone crudo si mantiene intatto il contenuto di vitamina C della quale è davvero ricco. :)

Even though they were amazing, I have to admit it wasn't the lightest recipe I ever tried, maybe because of that bread crumb soaked in oil!!!
Ok, but what could I have used instead of bread to make this recipe healthy and up to the standard of this blog??
Almonds...mmm...I wasn't too convinced about this choice...but I tried anyway and, OH MY GOD, is this even possible?? It worked out perfectly, and not just that, but the flavour and smell were the same as my grandma's ones. WIN!!

If you are a "raw foodie" I tell you that you have 3 options for this recipe: You can cook it, you can leave it entirely raw, or you can cook just the filling. It is amazing in any of these ways, guaranteed! And if you leave the capsicum raw it will also help keeping all its Vitamin C intact (capsicums are very rich with this) :)







Ingredienti per 2 persone

2 peperoni rossi o gialli (contengono più antiossidanti)
120gr mandorle con la buccia
2 manciate foglie di basilico fresco
10 olive Kalamata medie
12 pomodorini 
3 Tbsp di capperi piccoli
20 ml di olio d'oliva (o olio di riso)
1 Tbsp di sale + un pizzico
1 spicchio d'aglio tagliato a fettine sottili

Ingredients for 2 people

2 red or yellow capsicums (more packed with antioxidants)
120gr of almonds (skin on)
2 handfuls of basil
10 medium Kalamata olives
12 cherry tomatoes
3 Tbsp of baby capers
20ml olive oil (or rice oil)
1 Tbsp and one pinch of sea salt
1 garlic clove chopped into thin slices


Che abbiate scelto di fare questa ricetta cruda o non, i primi due step saranno gli stessi. :) Ricordatevi anche di lavare bene le verdure con aceto o bicarbonato per eliminare i pesticidi.

Tagliare il peperone longitudinalmente, privatelo dei semi e ricavatene 4 parti uguali.

The first few steps are the same if you choose either to go for the cooked or raw version of this recipe :) Also remember to wash vegetables with either vinegar or bicarbonate to get rid of the pesticides.

Cut the capsicum on the long side, take off the seeds and divide it in 4 parts.




Mettete le mandorle nel mixer e tritatele finemente fino ad ottenere la consistenza del pangrattato.
Nel frattempo tagliare i pomodorini in 4 parti piccole e snocciolare le olive schiacciandole con il lato di un coltello per rendere più facile la fuoriuscita del nocciolo. 
Questo è un trucco che mi ha insegnato la mia favolosa amica Angelita e che funziona alla grande!

Place the almonds in a mixer and mix them until you get the consistence of a bread crumb.
In the meanwhile cut the cherry tomatoes in 4 parts and pit the olives pressing them with the side of a knife to easily get rid of the bone. 
This is a trick my amazing friend Angelita taught me and that works perfectly!




Mettere in una ciotola le mandorle tritate, l'olio, i capperi, i pomodorini, le olive tagliate a pezzetti, il basilico tritato a mano (si, a mano!), il sale, le fettine d'aglio e mescolate fino ad amalgamare il tutto.

Place almonds, oil, capers, tomatoes, hand chopped basil (yes, hand chopped!), sea salt and the sliced garlic in a bowl then mix well. 





A questo punto avete 3 scelte: 

1- Mettere il composto nelle barchette di peperone e godervelo crudo. 
2- Infornare i peperoni ripieni a 200°C per circa 45 minuti.
3- Distribuire il ripieno su una teglia, cuocerlo a 200°C finché non sarà dorato, e successivamente riempire le barchette di peperone crudo.

Your choice :)

Se decidete di cuocerlo sentirete un profumo pazzesco!! Quello è il profumo che più di tutti mi ricorda quando ero piccola. :D

At this stage you have 3 choices:
1- Stuff the capsicums with the filling and eat enjoy them raw
2- Stuff the capsicums and cook them in oven for about 45 mins at 200°c
3- Distribute the filling on a cooking tray, cook it at 200°c until golden, then stuff the raw capsicums afterwards.

Your choice :)

If you decide to cook them, you will smell that amazing aroma coming from the oven and that is what reminds me my grandma and her capsicum so much!! Oooooh good times!!
