Once upon a time there was the pasta with chickpeas, onion and rosemary my mum used to make, and God knows how good it was!! It is one of those typical Roman recipes able to warm up your heart and fill up your soul, but with the weather warming up in Perth, wouldn't be better to have something fresher and quicker to make??
No worries, I got you covered!
These one-bite-mushrooms are all you need for an aperitivo in the garden, a dinner with friends or just to convince your mother-in-law that yes, you are the best!!

Capito??

By the way, do you know how much we underestimate Onion? I am serious, everyone uses it, but how many really know about its very good properties?
The onion (that makes us cry and smell sometimes) has in fact a great nutritive value due to its high content in mineral salts and vitamin C, and its juice is even used as antibiotic and antiseptic in dermatology. Incredible, right? Maybe you will start looking (and eating) it differently from now on.

Can I give you a tip though? Eat it RAW! And if you really can't digest it, then choose to steam or grill it rather than boiling it so you will not waste its precious vitamins in the water. Got it??

Ingredienti per 12 funghi
(per circa 2 persone)

12 funghi, preferibilmente Shiitake (non champignon)
1 cup di ceci cotti (170gr)
25gr di cipolla bianca fresca già pelata
Succo di mezzo limone piccolo
2 rametti di rosmarino
2 Tbsp olio d'oliva (30ml)
45ml di acqua
Sale q.b.

Ingredients for 12 mushrooms
(For about 2 people)

12 Shiitake mushrooms (can use different ones but button mushrooms)
1 cup cooked chickpeas (170gr)
25gr fresh white onion (weighted with no skin)
Juice of one lemon
2 rosemary sprigs
2 Tbsp of olive oil (30ml)
45ml filtered water
Salt to taste

Onion should be eaten raw, but since many of you cannot digest it properly, you can marinate to make it more digestible and to get a more mild flavour.
To marinate: Chop onion into thin slices and place it in a bowl with 1 Tbsp of olive oil and the juice of half lemon for 1 hour.

Spellate i vostri funghi come mostrato nell'immagine o puliteli strofinando delicatamente con un panno. Non lavateli altrimenti potrebbero assorbire troppa acqua!

Peel off your mushroom like shown in the picture or just give it a scrub with a soft cloth. Do not wash it otherwise it will absorb too much water!

Separate i gambi dalle teste e tagliateli a pezzetti piccoli.

Separate the stems from the heads and chop the stems in small parts.
Place the heads of the mushrooms on a tray with cooking paper and brash them with some olive oil on both sides.
Cook in oven at 170°C for 30 minutes.

Note: Mushrooms are better for us when we eat them cooked other than raw. If you want to know why, read my post of Raw Kale Tacos.

Cook the stems in a pan with some oil or under the grill for a few minutes until golden. Once cooked, place them in a mixer along with chickpeas, onion (drained from the juice), 1 Tbsp of olive oil (15ml), washed and chopped rosemary, 45ml of water and some salt and blend until you get a dense and smooth cream.
Meanwhile take the mushrooms off the oven and let them cool down on the tray.

Place the cooked mushrooms on a plate and top each one with some dip using a teaspoon or a pastry bag. Decorate with some rosemary and fresh olive oil :)

Shiitake mushroom is one of those truly miraculous foods! It is widely used in the Chinese medicine and it is especially rich in iron so very recommended if you are following a vegan or vegetarian diet!

And they are soooo tasty!! Where do you find something that is so good for you and also so tasty??

I used some long wooden skewers and served them on top of a wooden board. The result was pretty nice :)
Awesome for a dinner party!

It happened to all of us to have a "creativity crisis" in the kitchen, right?? You open the fridge, look at the pile of stuff (badly) organised into the fridge and you think: what the hell am I going to cook now??
It happened to me just few days ago, when I was thinking about this recipe watched closely by my curious boyfriend. Oh, by the way, did I ever tell you he has a very important role in this blog?? He's like one of those annoying "food reviewer" that pops at your restaurant and from which opinion your all menu (and reputation!) depends. And if you are wondering "Why him?" well, the answer is not that expected. Let's put it this way: If I can convince a guy that would eat 500gr of carbonara everyday to eat my healthy plates without getting that weird look in his face...I win!!...and the recipe gets to you :)

No ok, non esageriamo.

-i pomodori secchi profumano d'Italia!! (Ooooh yes!)

But let's get back to my "creativity crisis". I had in mind to create a salad, but I wasn't going to make a common salad (obviously) and after all, did I really want to make a salad?? How boring!
The secret for me is to look at things from a different prospective: everyone can chop a kale leaf and make a salad, I can't! I see other possibilities in it!!!
So a leaf can become a "taco" and a handful of mushrooms, sun dried tomatoes and walnuts can become an amazing, tasty filling...and they fly together!!! No ok, maybe I have gone too far with my imagination! :P
Anyway, here are 3 reasons why you should absolutely try this recipe:
-Kale is one of the most eaten vegetables by the health freak celebrities because of its incredible properties (antioxidant, packed in Vitamin C, Calcium, Iron, very low in calories and this is not all!)
-4 walnuts a day make your brain happy, like anticipated in this post.
-Sun dried tomatoes smell like Italy!! (Ooooh yes!)

Cominciamo!!!
So here we start!!!

Ingredienti per 2 persone

2 foglie di cavolo riccio o "kale"
1 cup di noci (100gr)
40gr di pomodori secchi (no sott'olio)
115gr di funghi a vostra scelta
1 manciata di basilico fresco
Mezzo limone piccolo
1 Tbsp olio d'oliva (15ml)
1 Tsp sale marino

Ingredients for 2 people

2 big Kale leaves
1 cup of walnuts (100gr)
40gr sun dried tomatoes (the dried ones, without oil)
115gr mushrooms (your choice:button, shiitake or other)
1 handful of fresh basil
Half small lemon
1 Tbsp olive oil
1 Tsp sea salt

First of all place the tomatoes in a bowl and leave them to soak in hot water for about 10 minutes.

In the meanwhile peel off the mushrooms (like shown in the picture) then chop them in smaller parts.

Now you have 2 choices:

Raw mushrooms: Place the mushrooms in a strain over a bowl and mix them with 1 Tbsp of olive oil, 1 Tsp of salt and a squeeze of lemon juice (do not exaggerate with it or it will taste too acid). Mix it well and leave to marinate for at least 15 minutes. They should release part of their water.

Cooked mushrooms: Put 1 Tbsp of olive oil in a pan over medium heat and gently stir fry your mushrooms for a couple of minutes.

After reading this and other articles regarding raw and cooked mushrooms, my suggestion is to go for the second option because safer for your health :)

Rinse the kale and chop off the hardest part of the stem. Place each leaf on a chopping board and "massage" it with the palm of your hand from bottom to top with few drops of olive oil. Be careful not to break it.  This process will help soften the leaf :)

Rinse the tomatoes from the water, chop them into smaller pieces and place them in a mixer along with the walnuts, basil leaves (washed with water and vinegar, always!!) and marinated or cooked mushrooms. Mix well for 30 seconds or so, it doesn't matter much if some parts are not chopped in very fine pieces.

Now, take your Kale "tacos", and fill them with the mix. If you want to serve them in a different way, you can wrap the tacos in baking paper or aluminium :)

I love the contrast between the crunchy Kale taco and the soft filling, and the sun dried tomatoes give a very good touch to it! Ben, my boyfriend (or my food critic I should say!!), gave me just one advice: this recipe is for sun dried tomato lovers, there is no doubt. If you are not a fan, you can either use a smaller amount of them or change recipe!!

The filling will be even tastier the day after!! Just in case you have some leftover, you can use it on top of your toasted bread or as a mix in your favourite salad.
