Raw Kale Tacos with Italian Mushroom,Sun dried Tomatoes & Walnuts Filling (Tacos crudi di cavolo riccio con ripieno di funghi,pomodori secchi e noci all'italiana)





Succede a tutti di avere una crisi di creatività in cucina, giusto??? Apri il frigo, guardi la montagna di cose distribuite (malamente) sui ripiani e ti chiedi: e ora cosa cucino?? 
A me è successo qualche giorno fa quando stavo pensando a questa ricetta sotto l'occhio curioso del mio fidanzato. Ah, ve l'ho mai detto che lui ricopre un ruolo importantissimo in questo blog?? E' un po' come quel critico rompiscatole che viene al vostro ristorante e dal quale giudizio dipende il vostro intero menu' (e la vostra reputazione!).
Se vi state chiedendo "perchè lui?" la risposta non è così scontata. Mettiamola così: se riesco a convincere uno che divorerebbe 500gr di carbonara al giorno a mangiarsi i miei piatti salutari senza che mi guardi strano...allora ho vinto, e la ricetta arriva a voi :)


It happened to all of us to have a "creativity crisis" in the kitchen, right?? You open the fridge, look at the pile of stuff (badly) organised into the fridge and you think: what the hell am I going to cook now??
It happened to me just few days ago, when I was thinking about this recipe watched closely by my curious boyfriend. Oh, by the way, did I ever tell you he has a very important role in this blog?? He's like one of those annoying "food reviewer" that pops at your restaurant and from which opinion your all menu (and reputation!) depends. And if you are wondering "Why him?" well, the answer is not that expected. Let's put it this way: If I can convince a guy that would eat 500gr of carbonara everyday to eat my healthy plates without getting that weird look in his face...I win!!...and the recipe gets to you :)


Ma torniamo alla mia crisi. Avevo in mente di creare un'insalata, ma ovviamente non poteva essere un'insalata qualsiasi e poi, volevo davvero fare un'insalata?? Che noia!
Il segreto per me è guardare le cose sotto un'altra prospettiva: tutti possono prendere una foglia di "kale" e tagliarla, io no! Io ci vedo delle altre possibilità invece! 
Così una foglia di cavolo riccio diventa un "taco" ed una manciata di funghi,pomodori secchi e noci si trasforma in un fantastico ripieno...e vola! No ok, non esageriamo. 
Ci sono almeno 3 motivi per cui dovete assolutamente  provare questa ricetta:

-il cavolo riccio, o "kale", è l'alimento più consumato dalle star salutiste di tutto il mondo per via delle sue innumerevoli qualità (antiossidante, ricco di vitamina C, calcio e ferro, poco calorico e chi più ne ha più ne metta)
-4 noci al giorno rendono il cervello felice come anticipato in questo post. 
-i pomodori secchi profumano d'Italia!! (Ooooh yes!)


But let's get back to my "creativity crisis". I had in mind to create a salad, but I wasn't going to make a common salad (obviously) and after all, did I really want to make a salad?? How boring!
The secret for me is to look at things from a different prospective: everyone can chop a kale leaf and make a salad, I can't! I see other possibilities in it!!!
So a leaf can become a "taco" and a handful of mushrooms, sun dried tomatoes and walnuts can become an amazing, tasty filling...and they fly together!!! No ok, maybe I have gone too far with my imagination! :P
Anyway, here are 3 reasons why you should absolutely try this recipe:
-Kale is one of the most eaten vegetables by the health freak celebrities because of its incredible properties (antioxidant, packed in Vitamin C, Calcium, Iron, very low in calories and this is not all!)
-4 walnuts a day make your brain happy, like anticipated in this post.
-Sun dried tomatoes smell like Italy!! (Ooooh yes!)


Cominciamo!!!
So here we start!!!




Ingredienti per 2 persone

2 foglie di cavolo riccio o "kale"
1 cup di noci (100gr)
40gr di pomodori secchi (no sott'olio)
115gr di funghi a vostra scelta
1 manciata di basilico fresco
Mezzo limone piccolo
1 Tbsp olio d'oliva (15ml)
1 Tsp sale marino


Ingredients for 2 people

2 big Kale leaves
1 cup of walnuts (100gr)
40gr sun dried tomatoes (the dried ones, without oil)
115gr mushrooms (your choice:button, shiitake or other)
1 handful of fresh basil
Half small lemon
1 Tbsp olive oil
1 Tsp sea salt


Per prima cosa mettete i pomodori in una ciotola e lasciateli in ammollo con acqua bollente per almeno 10 minuti.

First of all place the tomatoes in a bowl and leave them to soak in hot water for about 10 minutes.




Nel frattempo pelate i funghi eliminando lo strato superiore (come nella foto) poi tagliate il gambo a pezzetti e la restante parte a fettine.

In the meanwhile peel off the mushrooms (like shown in the picture) then chop them in smaller parts.




Ora avete due scelte. 
Funghi crudi: Mettete i funghi in un colino sopra ad una ciotola e conditeli con sale, 15ml di olio ed una spruzzata di limone (non esagerate o saprà troppo di limone). Mescolate bene e lasciate marinare per almeno 15 minuti. I funghi rilasceranno parte della loro acqua.

Funghi cotti: Scaldate un cucchiaio di olio in una padella e cuocete i funghi per qualche minuto.

Dopo aver letto questo ed altri articoli a riguardo, il mio suggerimento è quello di scegliere la seconda opzione perché più sicura per la vostra salute :)


Now you have 2 choices:

Raw mushrooms: Place the mushrooms in a strain over a bowl and mix them with 1 Tbsp of olive oil, 1 Tsp of salt and a squeeze of lemon juice (do not exaggerate with it or it will taste too acid). Mix it well and leave to marinate for at least 15 minutes. They should release part of their water.

Cooked mushrooms: Put 1 Tbsp of olive oil in a pan over medium heat and gently stir fry your mushrooms for a couple of minutes.

After reading this and other articles regarding raw and cooked mushrooms, my suggestion is to go for the second option because safer for your health :)




Lavate le foglie di Kale e tagliate via l'ultima parte del gambo, quella più dura. Mettete la foglia su un tagliere e "massaggiatela" con dell'olio dal basso verso l'alto con il palmo della mano stando attenti a non romperla. Questo procedimento serve a renderla più morbida :)

Rinse the kale and chop off the hardest part of the stem. Place each leaf on a chopping board and "massage" it with the palm of your hand from bottom to top with few drops of olive oil. Be careful not to break it.  This process will help soften the leaf :)




Sciacquate i pomodori, tagliateli a fettine, e metteteli in un mixer insieme alle noci, le foglie di basilico (lavate con acqua e aceto, sempre!!) e i funghi marinati. Mescolate per circa 30 secondi finché non otterrete un composto più o meno omogeneo, non importa se alcune parti rimangono intere.

Rinse the tomatoes from the water, chop them into smaller pieces and place them in a mixer along with the walnuts, basil leaves (washed with water and vinegar, always!!) and marinated or cooked mushrooms. Mix well for 30 seconds or so, it doesn't matter much if some parts are not chopped in very fine pieces.





Ora prendete i vostri "Kale" tacos e riempiteli con il composto. Se volete servirli in modo diverso potete avvolgerli per metà nella carta stagnola o in quella da forno :)

Now, take your Kale "tacos", and fill them with the mix. If you want to serve them in a different way, you can wrap the tacos in baking paper or aluminium :)




Adoro il contrasto tra la Kale croccante ed il ripieno morbido,ed il tocco dei pomodori secchi è perfetto! Ben, il mio ragazzo (o il mio critico culinario dovrei dire!!), mi ha dato solo un suggerimento: questa ricetta è per amanti dei pomodori secchi, non c'è dubbio. Se non siete degli appassionati, potete usarne una quantità minore o cambiare ricetta!!

I love the contrast between the crunchy Kale taco and the soft filling, and the sun dried tomatoes give a very good touch to it! Ben, my boyfriend (or my food critic I should say!!), gave me just one advice: this recipe is for sun dried tomato lovers, there is no doubt. If you are not a fan, you can either use a smaller amount of them or change recipe!!




Il ripieno sarà anche più buono il giorno successivo!! Se vi avanza potete sempre usarlo sulla bruschetta o come mix nelle vostre insalate preferite.

The filling will be even tastier the day after!! Just in case you have some leftover, you can use it on top of your toasted bread or as a mix in your favourite salad.

5 Ingredients Honey&Walnuts Raw Balls (palline di noci e miele con 5 ingredienti)





Considerando che ho appena intrapreso una 21 giorni di disintossicazione da zucchero non dovrei postare una cosa così deliziosa...ma siccome non tutti voi vi state astenendo dai dolci, ho pensato che potreste godervi queste deliziose palline anche per me!!

Considering I recently started a "21 day sugar detox" I shouldn't be posting this delicious stuff on my blog...but because not all of you are giving up sugar at the moment, I thought you might like to enjoy this delicious balls or me as well!!

Se c'è una cosa che ho scoperto di recente è che la forma di alcuni frutti o verdure che mangiamo ci ricorda parti od organi del nostro corpo al quale apportano più beneficio. 
Nel caso delle noci la connessione è abbastanza immediata: Noci e cervello!

If there's something I recently discovered, is that foods that look like parts of our body are in fact very beneficial for that part itself. 
With walnuts, the connection is pretty immediate: Walnuts & brain!

E sapete una cosa? Bastano 4 noci al giorno per rendere il vostro cervello felice. Non ve li ricordate i vostri nonni spaccare qualche noce alla fine di ogni pasto? io si, mia nonna è un'appassionata di noci, e sarà una casualità, ma all'età di 86 anni ci sta ancora tutta con la testa...a volte anche troppo!!

And guess what? You need as little as 4 walnuts per day to make your brain happy and get all the benefits :)
Don't you remember your grandparents cracking few nuts at the end of every meal? I do, my "nonna" is a fan of walnuts, and it might be a case, but at 86 years old she is still very very awake...sometimes even too much!!

Ingredienti per 14 palline

260gr noci
3 cucchiai di olio di cocco biologico ammorbidito o squagliato (45ml)
3 cucchiai di miele (45ml)
2 cucchiaini rasi di cannella
Semi di sesamo per decorare (bianchi o neri)


Ingredients for 14 balls

3 cups of raw walnuts (260gr)
3 Tbsp of melted or soft coconut oil (45ml)
3 Tbsp of raw honey (45ml)
2 Tsp of cinnamon powder
Some sesame seeds to decorate (black or white)





Queste super semplicissime praline si fanno in solo 4 passaggi!!
1: Tritate le noci nel mixer per qualche secondo senza polverizzarle.

You can make these super easy balls in just 4 steps!!
1: Grind the walnuts in your food processor for a few seconds without making them too fine.





2: Aggiungete il resto degli ingredienti e mescolate nuovamente.

2: Add the rest of the ingredients and mix it again.





3: Preparate le vostre palline prendendo una piccola parte di impasto e pressandola delicatamente tra le vostre mani.

3: Make your balls rolling a part of the dough into your hands.







4: Rotolate ogni pallina nel sesamo e lasciatela riposare in frigo per circa un'ora.

4: Roll each ball on the sesame seeds and let it rest in the fridge for about 1 hour.






Bastano 5 minuti per fare questo semplicissimo dessert!!
Se avete una voglia matta di dolce, ma non avete molto tempo, queste palline sono perfette per voi! 
Facili, veloci, buone!!

You need just 5 minutes to make these delicious balls!! If you are craving a quick dessert then this is definitely for you. Easy, fast, tasty!





E se adorate la cannella come me, potete cospargerne un po' anche sopra...!!! Ci sta troppo bene :)

And if you love cinnamon like I do, you can sprinkle some on top as well...!!! It goes sooo well with it :)

Raw Chocolate Filled Biscuits (Biscotti ripieni al cioccolato)







Non so voi, ma io sono una di quelle persone che potrebbe rinunciare a tutto, tranne che alla cioccolata. 

Dopotutto, cosa sarebbe la vita senza questo meraviglioso cibo... diciamocelo!

I don’t know about you, but I am one of those people that could give anything up BUT chocolate...After all, what would life be without this amazing food...let's be honest! 


Ma possibile che una cosa così buona ci faccia anche così bene?? Si, lo è, ma la presenza di grassi saturi in questo alimento ci dovrebbe fermare dal mangiarne una barretta intera solo con lo scopo di "ingerire antiossidanti"...giusto??
Detto ciò però, il cioccolato è considerato un cibo dalle proprietà sensazionali. 

Is it possible that something soooo tasty can also be veeery good for us?? Yes, it is, but the saturated fats in it tell us that we need to control the quantities that we eat...this means that if you are planning to eat the whole block it's not going to be that good for you!! Right!?Having said that, this is an ingredient with amazing benefits!



Ma vi siete mai chiesti come poter ottenere il massimo dei benefici dalla cioccolata? Quali sono le regole perché ci faccia bene? Io me lo sono chiesta eccome, e dopo una luuuuunghissima ricerca sono arrivata a scoprire 3 cose fondamentali da tenere a mente: 

But did you ever asked yourself how to get the most of the benefits from chocolate? What are the rules to make sure we eat it in an healthy way? I did ask myself, and after a looooong research I discovered 3 important things that we all need to keep in mind:


-I latticini riducono l'assorbimento dei preziosi antiossidanti del cacao da parte del nostro organismo. Quindi? se preparate il vostro frullato usate surrogati del latte come per esempio il latte di riso o di mandorle :)

-Dairy can reduce the absorption of cacao antioxidants in our body. So? If you are going to make your chocolate smoothie make sure you use a non dairy milk like rice or almond milk :)


-Mangiate cioccolato "dark" con una percentuale di cacao superiore al 65%. Contiene più flavonoidi rispetto al cioccolato al latte ed al cioccolato bianco.

-Eat just dark chocolate made with a minimum of 65% cacao. It contains more flavonoids comparing to milk or white chocolate.


-Privilegiate il cacao "raw" ovvero crudo. Perché? Perché secondo questo studio uno dei diversi trattamenti utilizzati per lavorare il cacao, chiamato "Dutching Process", ridurrebbe di molto la percentuale di antiossidanti e procianidine nel prodotto finale. Quante parolone...Non siete convinti? Qui trovate un'ulteriore conferma. 

-Choose raw natural cacao. Why? because according to this study, one of the processes used to produce cacao, called "Dutching Process", can reduce the contents of antioxidans and Procyanidins. Gosh...too many difficult words...not convinced yet? Here you can find out more about this.


Beh insomma, dopo tutto questo parlare di cioccolata a me è venuta fame, allora mi metto in cucina e creo...cosa? Pastafrolla "raw" al cioccolato: Healthy, buooooona, faaaacile!! E che ci faccio? Biscotti ripieni di crema al cioccolato...se li nomino già mi viene l'acquolina in bocca!!!

Attenzione: questi biscotti possono provocare felicità e voglia di finirli tutti.

Well, after all this "chocolate talk" I am feeling a bit starving, so I get into my kitchen and start creating. What am I creating? Raw-Chocolate-Short Pastry. Healthy, taaaasty and eeeeeeeeasy!!!And what am I gonna do with it? Raw chocolate biscuits filled with a creamy chocolate mousse...something to die for!!! 

Warning: these biscuits can provoke happiness and a desire of finishing them all.




Ingredienti per circa 8 biscotti

Per la pastafrolla

Nb. le "cup" ed i "cucchiai" usati seguono le unità di misura australiane
  

1 cup di noci (110gr) + 8 noci per decorare
1/2 cup di datteri iraniani (80gr) Se usate i datteri Medjool considerate che sono un pochino più burrosi di quelli iraniani
1/4 cup polvere di cacao cruda bio (25gr)
1 cucchiaio burro di cacao bio squagliato (15ml)


Per il ripieno al cioccolato

1 cup anacardi crudi ed ammorbiditi in acqua per circa 15 minuti (130gr)
1/4 + 1/4 + 1/2 cup di acqua 
2 cucchiai burro di cacao squagliato (30ml)
4 cucchiai sciroppo d'Acero bio (60ml)
1/4 + 1/4 cup polvere di cacao cruda bio (50gr)




Ingredients for about 8 biscuits

For the short pastry

1 cup of walnuts (110gr) + about 8 walnuts to decorate.
1/2 cup of dates (80gr) I used Iranian dates, but you can use Medjool dates too, just be mindful they are more moist so you might need less of them.
1/4 cup raw cacao powder (25gr)
1 Tbsp melted raw cacao butter (15ml)

For the chocolate filling

1 cup raw cashews soaked for about 15 mins (130gr)
1/4 + 1/4 + 1/2 filtered water
2 Tbsp melted raw cacao butter (30ml)
4 Tbsp organic Maple syrup (60ml)
1/4 + 1/4 cup raw cacao powder (50gr)





Cominciamo!!
Let's start!!

Per il ripieno: sciacquate gli anacardi, metteteli nel vostro mixer, e mescolate fino a che non otterrete pezzetti piccolissimi.

For the filling: rinse the cashews, place them into a food processor, and mix them until they get crushed as fine as you can.





Unite il resto degli ingredienti e mescolate fino a che non otterrete un composto cremoso e liscio. Mettete la mousse in una ciotola e lasciate riposare in frigo per un'ora circa.
Durante questo tempo, il burro di cacao tornerà a solidificarsi e permetterà al composto di ottenere la consistenza desiderata :)

Add the rest of the ingredients and mix until creamy and smooth. Place the mousse inside a bowl and let it set into the fridge for about an hour. During this time, the cacao butter will become dense again and it will give the right consistency to our mousse.





Per la pastafrolla il procedimento è facilissimo: mettete le noci nel vostro mixer e mixate fino a formare una granella.

The short pastry is as simple as this: place the walnuts into the food processor bowl and mix until crumbled.







Unite i datteri tagliati a pezzetti piccoli, unite il resto degli ingredienti, e mixate di nuovo fino a che non otterrete un composto granuloso.

Add dates cut into small pieces, add the other ingredients, then mix until you get a crumbled mix.







Lavorate la pasta con le mani e stendetela su un foglio di carta da forno aiutandovi con un matterello...proprio come fareste con la pasta frolla normale! :)
Deve essere sottile, circa 3 millimetri.

Lasciatela riposare in frigo per circa 15 minuti finchè non sarà abbastanza solida da poterla tagliare e maneggiare.
Create i vostri biscotti utilizzando due misure diverse di bicchiere o stampini, una più piccola per il fondo ed una più grande per la copertura.


Work the paste with your hands and roll it on a baking  sheet using a rolling pin....exactly like you would do with a short pastry dough! :)
It has to be thin, 3 millimetres maximum.
Leave this pastry to set in the fridge for about 15 mins until it gets firm, then take it out and start cutting your biscuits.
Use two different sizes of glass or cutter so you can use the smaller one to make the base and the larger one to make the top of the biscuit. 






Mettete un cucchiaino di mousse al centro di ogni biscotto e aggiungete una metà di noce.

Place a spoon of filling in the centre of each biscuit and top with half walnut.





Coprite ogni biscotto con un cerchio più grande e chiudete i bordi premendo delicatamente con le dita.
Notare: se la vostra pasta frolla è troppo fredda, e quindi troppo dura, vi succederà quello che è successo a me...si romperà in superficie...ma io credo che l'effetto sia comunque bello!! sembrano biscotti cotti al forno :)

Top the biscuits with a larger circle of short pastry and seal it all around pressing with your finger tips.
Note: If your pastry it's a bit too cold, therefore hard, it will happen what happened to me...it will break a bit on top...but I think it still looks very cool anyway!! They look like cooked biscuits indeed :)





Et voilà! I vostri biscotti crudi ripieni di mousse al cioccolato sono pronti!!!
Lasciateli riposare in frigo per circa 30 minuti o 1 ora...sempre se riuscite a non mangiarveli prima ovvio!! :P

Et voilà! your raw chocolate filled biscuits are ready!!! Set them into the fridge for 30 mins or so...this is just if you can resist from eating them straight away...obviously! :P










La mia amica Greta è stata la prima a testare questa ricetta un pomeriggio che è passata da me per un caffè e...sapete cosa è successo? ci siamo quasi finite tutto il piatto!!! Troooooppo buoni!!!
