Roasted Cauliflower, Spinach & Almond Salad With Lemon Cream (Insalata di cavolfiore,spinaci e mandorle con salsa al limone)





Sapete quando vi capita di stupirvi davanti a qualcuno che cucina una cosa in un modo al quale non avreste mai pensato prima? 
A me è capitato un po' di tempo fa guardando il mio ex coinquilino Mic mettere in forno dei ciuffi di cavolfiore conditi solo con olio, sale e pepe. Non so voi, ma per me fino ad allora il cavolfiore aveva avuto una sola forma: quella del cavolfiore bollito.
Che vita triste deve essere stata la mia!!!

You know when someone surprises you cooking something in a way that you would have never thought before?
This happened to me a while ago when I watched my old housemate Mic putting some raw cauliflower into the oven. Well,not sure about you guys, but until then I only knew this vegetable cooked in one way: boiled cauliflower.
What a sad life I must have had!!


Ma in cucina come nella vita c'è sempre qualcosa di nuovo da imparare e così io ho preso spunto da questa idea per farne un'insalata fresca e super nutriente.
Cavolfiore, limone e mandorle?? Vi giuro che non sono impazzita...se volete stupire qualcuno dovete provare questa insalata. 
E' facile, fresca, buona, croccante, delicatamente profumata al limone.

But in the kitchen, as in life, there is always something new to learn, so I took my housemate's idea to create a fresh, super nutrient salad for you :)
Cauliflower, lemon and almonds?? Yes, I didn't lose my mind...if you want to surprise someone you cannot skip trying this recipe :)
It's simple, fresh, tasty, crunchy, with a light lemon twist.


Vi stupirete nello scoprire che non c'è nessuna "crema" nella crema al limone. Questa insalata è completamente vegana e senza peccato! Il segreto si chiama SEMI DI GIRASOLE. 
Per chi non li conoscesse, sono semi dalle fantastiche proprietà, con un alto contenuto di proteine (ebbene si, non esiste solo la carne!), ferro, vitamine (vitamina E in particolare) e chi più ne ha più ne metta! Non solo, contengono anche acido oleico, ottimo per prevenire malattie cardiovascolari.
Unica nota dolente, ma non troppo, sta nel loro alto  contenuto calorico. Quindi? Mangiatene, ma con moderazione :)

You will be surprised to find out there is no "cream" in the lemon cream. This salad is fully vegan and guilt free! The secret is this: SUNFLOWER SEEDS.
For those of you that don't know these seeds yet, they are packed with great properties, they're high in proteins (yes, there isn't just meat in this world!!), iron and vitamins (especially vitamin E). And not just that, they are also high in Oleic Acid, very good to prevent cardiovascular problems.

The only bad side is that they are also high in calories. So? Do not exceed the right amount per day :) That's all!



Ingredienti per 2 insalate

Per la crema al limone

1/2 tazza di semi di girasole organici (ammorbiditi in acqua per 2 ore)
Succo di limone q.b. (circa 1 limone)
1 cucchiaino di polvere di cumino
1 cucchiaio di olio d'oliva (15ml)
3 cucchiai di latte di mandorle o riso (45ml)
2 cucchiai di acqua (30ml)
Sale q.b.


Per l'insalata

4 o 5 tazze di cavolfiore tagliato a ciuffetti
1 cucchiaio (15ml) di olio di riso 
60gr mandorle a fettine



Ingredients for 2 salads

For the lemon cream

1/2 cup of organic sunflower seeds soaked for 2 hrs
Lemon juice to taste (about 1 lemon)
1 Tsp cumin powder
1 Tbsp olive oil (15ml)
2 Tbsp water (30ml)
3 Tbsp almond or rice milk (45ml)
Salt to taste

For the salad

2 handfuls of spinach
4 or 5 cups of cauliflower chopped into florets
1 Tbsp (15ml) of rice bran oil for the cauliflower
60gr sliced almonds



 Lasciate il cavolfiore in ammollo nel lavandino con acqua e 2 tazze di aceto bianco per 20 minuti insieme agli spinaci.
Questo è un procedimento che faccio per tutte le verdure in quanto aiuta a rimuovere i pesticidi :)

Half fill the sink with water and 2 cups of white vinegar and soak the cauliflower florets and the spinach for 20 minutes.
I do this process for all my vegetables as it helps removing the pesticides :)


Disponete le mandorle su una teglia e cuocetele a 200° per pochi minuti finché non prenderanno colore. Toglietele dal forno e fatele raffreddare. 
Nel frattempo infornate i ciuffetti di cavolfiore sciacquati, asciugati e mescolati con un cucchiaio di olio di riso per circa 15 minuti.

Opzione: Siccome il cavolfiore è una di quelle verdure che fanno benissimo anche crude, potete decidere di tagliare i ciuffetti a fette molto sottili, marinarle con del limone, e creare la vostra insalata interamente cruda!


Place the almonds on a cooking tray and roast them in the oven at 200° until golden. Take them out and let them cool.
Now roast the cauliflower florets mixed with a tbsp of rice oil in the same oven at 200° for about 15 minutes.
Option: since the cauliflower is one of those vegetables that are probably better if eaten raw, you can choose not to cook it and just slice the florets very thin.



Per la crema al limone: mettete nel mixer tutti gli ingredienti e frullate fino a che non otterrete una crema abbastanza liscia. Aggiustate di sale ed aggiungete acqua se necessario. Easy!

For the lemon cream: put all the ingredients in the mixer  and mix until you get a smooth cream. Add salt to taste and water if necessary. Easy!


Ora siete pronti per preparate il vostro piatto!! Mettete sul fondo 2 cucchiai di crema al limone poi gli spinaci,i ciuffetti di cavolfiore ed infine le scaglie di mandorle.
Condite con un filo d'olio d'oliva.


You are now ready to prepare your plate!!
Put 2 spoons of lemon cream on the bottom, top with spinach then cauliflower then almonds.
Dress with a drop of fresh olive oil.








Ecco fatto!! così semplice e così buona :)

And theeeeere you go!! So simple and so good for you :)
