Coconut and Herbs Squid Rings Salad with Spinach and Pumpkin Seeds (Insalata di calamari alle erbe e cocco con spinaci e semi di zucca)



The other day, as usual, I came back home at 3pm still in need of having some lunch. All I had in my hands was a small bag of super fresh calamari just bought at the market!! Even though most of my recipes are vegan, I really cannot give up seafood every now and then. The most important thing though, is to be selective regarding what we put on our plate (and in our mouth!), and be aware of choosing seafood that is low in mercury content. This and also this links are very useful to understand what this metal is, where we can find it, what is the risk in consuming it and which seafood is safer than other, like calamari for example! 

But hey, let's get back to our recipe!! Calamari and coconut??? Yes, I know this might sound weird for most of the Italians used to our mediterranean flavours, but I guarantee this is an union made to last! :)

L'altro giorno, come al mio solito, sono tornata a casa alle 3 del pomeriggio senza aver avuto ancora la possibilità di mangiare un boccone. Tutto quello che avevo in mano era un sacchetto di freschissimi calamari appena comprati al mercato!! Seppur la maggior parte delle mie ricette siano vegane, non posso proprio rinunciare al pesce una volta ogni tanto! L'importante però è fare una selezione di quello che mettiamo sul nostro piatto (e nella nostra bocca!), e distinguere tra pesci ad alto e basso contenuto di mercurio. Questo e questo link sono utili per comprendere cos'è questo metallo, dove si trova, quali rischi si corrono nel consumarlo e quali pesci ne contengono meno, come ad esempio i calamari!

Ma torniamo alla nostra ricetta!! Calamari e cocco??? So che molti di voi saranno scettici, soprattutto gli italiani abituati ai nostri sapori mediterranei, ma vi garantisco che questa è un'unione fatta per durare!!!




Ingredients for 2 people

For the squids

500gr of squid rings
Fresh mixed herbs: basil, parsley and mint (2 good handfuls) 
1 Tbsp of melted coconut oil
1 small garlic clove
Chilli and sea salt to taste


For the salad

200gr of fresh spinach
1/4 cup of organic pumpkin seeds
Olive oil and sea salt to taste
1/4 cup or more of shredded coconut


Preparation time: 30 minutes
Cooking time: 10 minutes
Useful tools: mezzaluna knife 



Ingredienti per 2 persone

Per i calamari 

500gr di anelli di calamari 
Erbe fresche miste: basilico, prezzemolo, menta (2 manciate)
1 Tbsp olio di cocco liquido
1 spicchio d'aglio piccolo
Peperoncino a piacere
Sale marino q.b.

Per l'insalata

200gr di spinaci freschi
1/4 cup di semi di zucca biologici
Olio d'oliva e sale marino a piacere
1/4 cup o più di cocco grattugiato


Preparazione: 30 minuti
Cottura: 10 minuti
Strumenti utili: Mezzaluna



Chop all the herbs and the garlic along with coconut oil and sea salt until fine. Add some chilli powder or flakes to taste.

Note: yes, I know! What you see in the ingredient's pic isn't spinach, in fact, it's Kale! Well, I have changed idea while I was cooking!! It happens sometimes ;) You can choose to use either spinach or kale because they both work very well ;)


Aiutandovi con una mezzaluna tritate aglio ed erbe insieme all'olio di cocco ed al sale marino. Aggiungete peperoncino a piacere.

Nota: si lo so, quelli che vedete nella foto degli ingredienti non sono spinaci bensì cavolo riccio...ho cambiato idea mentre cucinavo!! Succede :) Voi potete usare entrambe indistintamente :)






Rinse the calamari with cold water and place them on a tray with baking paper. Top with the green salsa and mix well.

Sciacquate i calamari con acqua fredda, distribuiteli su una teglia foderata con carta da forno e versateci sopra la vostra salsa verde. Mescolate bene fino ad amalgamare il tutto.





Set the grill on medium/high heat and grill the calamari for about 10 minutes until lightly golden. 
Note: I am not a fan of the toxic products they use to make non stick pans, this is the reason why I often steam or grill my food. These are the best and healthiest way of cooking for me :)

Infornate sotto il grill a temperatura medio alta per 10 minuti circa finché non risulteranno leggermente dorati. Girateli a metà cottura.
Nota: Non sono una fan dei prodotti chimici che vengono usati per rendere le padelle antiaderenti, ecco perchè spesso uso la cottura al vapore o al forno. Sono sempre le opzioni migliori e più salutari per me :)





Meanwhile calamari are cooking, wash the spinach and mix them well with the pumpkin seeds, the shredded coconut, some olive oil and sea salt in a large bowl. 

Mentre i calamari cuociono lavate gli spinaci e mescolateli bene con i semi di zucca, il cocco, un po' d'olio e sale in una ciotola capiente. 






Place the salad on a plate, top with more coconut and serve!

Sistemate l'insalata mischiata su di un piatto e distribuiteci sopra i calamari ancora caldi.
Decorate con altro cocco grattugiato e servite!






The coconut oil just gives to this dish such an amazing, delicate flavour...and it is way healthier than cooking with any other oil!

L'olio di cocco dona a questo piatto un sapore fantastico e delicato...ed è più salutare che cucinare con qualsiasi altro olio!

  1. Ma i calamari non sono animali? O gli invertebrati non hanno gli stessi diritti dei pucciosetti? :)

    1. Ciao, certo che lo sono :)
      Nella mia cucina do spazio alle ricette vegane per un buon 90% mentre per il restante 10% mi piace condividere ricette che utilizzano pesce, ma solo e rigorosamente quello che ha un basso contenuto di metalli (mercurio). Questa non è solo una scelta per il sito, ma è la mia dieta di tutti i giorni :) Spero di aver risposto alla sua domanda :)
